Khm. paz' vamo, dosta onih koji su kod mene probali pohani sir su me pitali kako ga radim, koja je tajna tog sira i zasto je tako ukusan. Meni osobno nije nista posebno ali ljudi ga ocito obozavaju stoga, evo recepta pa mozete i sami probat napravit odlican pohanac.

Prvo.
Najvaznija stvar kod odabira sira je zamisliti si ne sto sir moze napraviti za vas vec sto vi mozete napravit sa sirom. Ja na to gledam kao na parenje, na spajanje, breeding process. Daklem, uzmem sir Podravac ili Tilzit, uz njih uzmem i malo Parmigana ili Dimsija. Nikako za pohanje ne uzimam Camambert ili Chedar i sl. sireve jer.. steta njih pohat.

Drugo.
Sir (Podravac ili Tilzit) se reze na ploske (dakle koliko god vam treba u bilo kojim velicinama no bitno je da je oko 1 cm debeo). Dimsi se reze na jos tanje fetice tj. jos bolje ga je rezati sa onom rezalicom za sir tako da imate male sicusne fetice koje samo naljepite na 1cm debele ploske sira.

Trece.
Jaja i krusne mrvice. Stavite par jaja u tanjur (ja nikad ne stedim na jajima, jednostavno ih izlupam dva-tri unutra jer ako mi isfali onda jos kasnije moram razbijat jaja sa prstima punima krusnih mrvica i onda sve okolo zaserem sa jajima i mrvicama.. i onda moram jos i cistit kasnije), uzimajte jednu po jednu ploscicu sa zaljepljenim dimsijem gore (tajna za zaljepit dimsi na plosku sira je malo vode tj. vlage, tanka fetica dimsija se isti tren zalijepi na plosku sira. Svaka ploska PRVO ide u krusne mrvice pa u jaja (neki obrnuto no ja ovako jer ovako se dobije malo zraka izmedju sira i krusnih mrvica pa se sir lijepse otopi i popuni taj zrak sa sirom, i sto je najvaznije, ne curi van). Dakle, prvo u krusne mrvice pa u jaja, pa opet u krusne mrvice pa u jaja pa opet u krusne mrvice pa u jaja - ja ponavljam process dok ne vidim da su sve rupe na siru popunjene tj. da sir nikuda van ne bi mogao iscuriti, uglavnom moja je tajna da sir dobro popunim jajima i krusnim mrvicama.

Cetvrto.
Tava. Teflonka ili neka slicna, gore ide ulje (ulje ide po volji ali bolje je vise ulja, ja stavim minimalno jer je sir iovako ionako vec masan pa ga ne zelim zamastit da slijedecih dva dana ne mogu disat kad ga pojedem). Tava mora biti uzarena, ulje mora spricati van od vrucine i tek tada mozete stavit gore vase gotove ploske sira (dakle izjajizirana i izkrushimrvicirana). Ja inace u ulje stavim i malo vegete ili bosiljka (daje totalno drugaciji okus hrani). Stavite sir na tavu. Nekoliko minuta kasnije kada vas "file" poprimi zlatnu boju, sve je gotovo.

Peto.
Izvadite pazljivo iz tave, stavite na papirnate maramice tj. one velike role papira za brisanje ruku da se iscjedi ulje. Vas sir je gotov, posluzite ga ili uz pommes, limun, kruh... a nikako uz rizu, tjesteninu ili neki ljuti umak.

ZAKLJUCAK:
Tajna svega je koliko volite to sto radite za jest, naravno mozete napravit sandwich od polya i sira i zaboravit sve ovo gore napisano ali ako stvarno zelite pojest nesto fino onda se drzite nekih pravila ili napravite svoja sama pravila, zakone i zacine - zacin je majka svega. Zacin poput Vegete recimo zna i zamaskirati najgore jelo ikada i pretvorit ga u nesto "hmm.. zanimljiv okus" drugacije.

toliko od mene, nadam se da cete isprobati recept i uzivati pripremajuci vase jelo.

da. ja sam to isprobao ono, cista slucajnost ali fakat pali, mrvice se zaljepe gore i jos se vise zaljepe kad ih nakon toga tutnes u jaja jojo! Very Happy

meni prijatelj koji mi je ujedno i susid voli kuvat i to...on pohuje sir, ali umjesto krusnih mrvica stavlja sezam, e to ispadne ludilo!!!
